Test Kitchen: Bento Box

Bento boxes are the latest craze in kids’ school lunches. Originally from Japan, the concept is to have one takeout box with separate compartments for different foods. 

You can buy actual bento boxes, or you can do as I did and use a container you already have and use cupcake liners to portion side dishes.

I chose to make turkey, cheese and spinach roll-ups with light mayonnaise and Sriracha sauce. These can be adjusted if your kids aren’t fans of Sriracha or spinach.

Bento boxes aren’t just for kids. I tried these roll-ups, and now I’m hooked. There are tons of ideas for bento box lunches. You can make a different one every day of the week.

RECIPE:

Ingredients

1 tortilla wrap

1 tablespoon light mayonnaise

1/2 teaspoon Sriracha sauce

Spinach

1/8 cup mozzarella cheese

4 slices of turkey lunch meat

Directions

Using a knife, blend together the light mayonnaise and Sriracha sauce, and spread it all over the wrap.

Cover the wrap in spinach. (It’s up to you how much you use. I covered it with one layer.)

Sprinkle on the mozzarella.

Spread the turkey evenly on the wrap.

Starting at one end, roll up the wrap.

Cut the slices as thick as you want with the open end of the wrap facing down.

Complete the bento box with 1/4 cup of nuts and a cupcake liner full of berries.
